Soft Shell Blue Crab

Small in size, But BIG in Taste, These Crabs caught just after molting (before the new shell has had time to harden) are prepared as soft shell crabs. Soft shell crabs are prepared by first cutting out the gills, face, and guts. The crab is then battered in flour, egg, and seasoning, then fried in oil until crispy. The result can be served as an entre', or in a sandwich. When served between bread slices or crackers, the legs stick out on either side, and the entire crab is consumed, legs and all.

Availability: In stock

Our soft shell crabs are jumbo in size ranging from 4-5 inches. Sold individually. Soft-shell crab is a culinary term for crabs which have recently molted their old exoskeleton and are still soft. Soft-shells are removed from the water as soon as they molt to prevent any hardening of their shell. This means that almost the entire animal can be eaten, rather than having to shell the animal to reach the meat. The exceptions are the mouthparts, the gills and the abdomen, which must be discarded. The remaining, edible part of the crab is typically deep fried or sautéed.
